Ice Cream anyone? Anyone…?

Here in the midwest we've been enduring SWELTERING heat and humidity that knocks the air right out of ya! It's one of the beautiful things about our neck of the woods.

If you want to experience EVERY season in one place just stay in Kansas for a year. You won't be disappointed.

Back to my story… (this wandering mind thing is going to hang around a while.)

When the heat is to the point of unbearable we like to dig out the old ice cream maker and whip up a batch of our favorite cool treat.

I have always been a lover of homemade ice cream.  Memories flood in of sitting on the old hand crank ice cream maker as a kid while Dad labored away at the deliciousness inside that metal canister.  My sister and I would squirm with anticipation as our mouths watered for that cold, icy treat.

I married into a family that LOVES homemade ice cream more than life itself.  Every large family gathering always includes a bucket of this stuff.

Several years ago a close friend shared her ice cream recipe with us and I must say… This stuff is THE most amazing ice cream I have EVER had!!!!  Not only is it smooth and creamy, unlike the old-school version that’s more like ice milk, it’s egg-less and requires NO cooking of the mixture.

This recipe is a treasure and our family’s favorite.  I hope you love it as much as we do.

Dee Ellen’s Homemade Ice Cream

1 Qt. bottle Coffee Mate Creamer (Original or French Vanilla)

1 large box instant pudding mix

2 c. sugar

1 tbsp. vanilla extract

Combine all the above ingredients and mix well.  Pour into the ice cream maker.  Add milk to the fill line.

This recipe is for traditional vanilla ice cream.  You can make ANY flavor variation from this recipe.  Simply change your pudding flavor OR add “mix-ins” prior to adding the milk.

A favorite of ours is Cookies and Cream.  Use the French Vanilla creamer and three sections of a package or Oreos crushed.  Add the Oreos before the milk.  Fill with milk to the fill line after adding the Oreos.  Proceed with ice cream making as usual.

I dare you NOT to make it!

Peace, love and creamy dreams!
