Since I don't have much time to post, but feel SO disconnected from all of you I thought I'd share a quick recipe.
When we decide to get a little creative and fun Jackie and I tend pull out the jalapenos and make poppers as an appetizer. This usually always satisfies the guys until all of our creative jucies have finished flowing and the feast is on the table.
These beauties couldn't be simpler. Here's what you need:
jalapenos (as many or as few as you'd like)
8 oz. cream cheese
shredded cheddar or monterey jack cheese
bacon bits (optional)
Start by halving the jalapenos and scooping out the veins and seeds with a spoon. Be careful in handling the peppers as the juices will burn sensitive eyes, nose and mouth membranes if on your fingers and touching the face. I try to use only one hand to touch the peppers and then wash like crazy when done.
Mix together all the remaning ingredients except the raw bacon. If you'd like an added kick to the poppers you can add some fresh bacon bits to the cream cheese mix.
Spoon a good amount of the mixture into the well of each jalapeno half. Don't get too much as it will ooze out and be wasted at the bottom of the grill. Wrap a half a piece of bacon around each pepper and secure with a toothpick.
Throw theese puppies on the grill and let them get gooey, crispy and happy.
